I'm sharing how to make perfect raspberry macarons at home using the Italian meringue method. The fresh raspberry flavor spreads in your mouth!
📌 Ingredients For Raspberry Macarons
About 36 1.5-2 inch (4-5 cm) wide macarons
• Egg whites: 65g (2 eggs)
• Powdered sugar: 160g (1 1/3 cups)
• Almond flour: 166g (1 2/3 cups)
Italian meringue - Cook the syrup to 244ºF (118ºC).
• Egg whites: 65g (2 eggs)
• Water: 45g (3 Tbsp)
• Granulated sugar: 150g (3/4 cup)
Bake (Preheated) at 300ºF (149ºC) for about 20 minutes for about 2-inch wide macarons.
Adjust the time and temperature accordingly, depending on the oven and size of the macarons.

You’ll need about half of the amount for one batch of the macaron shells. Make a half batch if your stand mixer can pick up the small amount of yolks. (Or when using a hand mixer)
• Egg yolks: 120g (about 7 -8 eggs)
• Water: 80g (1/3 cup)
• Granulated sugar: 200g (1 cup)
• Unsalted butter (softened): 450g (4 sticks)
• Salt: 1/8 tsp
Heat the hot sugar syrup to 244ºF (118ºC).
Use half of the amount for one batch of the macaron shells.
Raspberry jam: (1.5 times of the original recipe: • Easiest Homemade Raspberry Jam (No Pectin,... Follow the same steps!)
• Raspberry: 195g (1 1/2 cups)
• Granulated sugar: 130g (2/3 cup)
• Lemon juice: 1.5 tbsp
Take about 2 Tbsp of the jam to mix in the buttercream (optional) and use the rest to spread it on macaron shells.
