Giving Cassava and Lumpia’s to our friends (Christmas Spirit)

I wanted to do something special for Christmas, so I thought why not put my new learned skills to the test. And make some cassava & lumpia’s to give to friends & family. Stefan was a big helps since it was a lot to make. After that we had to do a small road trip since they don’t live close together and an extra long stay at my parents house of course. I had fun making it and loved seeing everybody just before Christmas.

Lumpia’s
Ingredients: both batches
1x 50 Lumpia Wrapper (frozen) (only 30 needed)
500 gram ground beef
4 carrots (minced for method 2)
2 onions (minced for method 2)
1/2 cup cabbage (don’t use for method 2)
Canola Oil to fry (or Sunflower)
1 tsp garlic powder
1/2 cup green onions
3 eggs (including 1 egg for sealing lumpia)
2 cloves garlic (minced for method 2)
1 tablespoon sesame oil
1 teaspoon soy sauce
1 tsp black pepper
2 tablespoon garlic
1 tsp salt

Steps 1
1. Place a wok or large skillet over high heat, and pour in 1 tablespoon vegetable oil.
2. Cook beef, stirring frequently, until no pink is showing.
3. Add garlic and onion in the same pan for 2 minutes.
4. Stir in the carrots, green onions, and cabbage.
5. Season with pepper, salt, garlic powder, and soy sauce.
6. Remove from heat, and set aside until cool enough to handle.
7. Place three heaping tablespoons of the filling diagonally near one corner of each wrapper, leaving a 1 1/2 inch space at both ends.
8. Fold the side along the length of the filling over the filling, tuck in both ends, and roll neatly. Keep the roll tight as you assemble.
9. Mix 1 egg in small bowl to moisten the other side of the wrapper to seal the edge. Cover the rolls with plastic wrap to retain moisture.
10. Heat a wok/pan over medium heat, add oil to 1/2 inch depth, and heat for 5 minutes. 11. Slide 3 or 4 lumpia into the oil.
11. Fry the rolls for 1 to 2 minutes, until all sides are golden brown.
12. Let it cool in a drain or paper towels (to let some oil leak off it)
13. Serve immediately & enjoy.

Steps 2
1. In a bowl add: a 500 gram ground beef the minced: 4 carrots / 2 onions / 1/2 cup green onions / 2 cloves garlic.
2. Add the: 1 tablespoon sesame oil / 1 teaspoon soy sauce / 2 eggs / 1 tsp garlic powder / 1 tsp black pepper / 2 tablespoon garlic / 1 tsp salt
3. Mix everything.
4. Cut the lumpia sheets in half (triangle shape)
5. Add a spoon full to a lumpia skin (make it thin).
6. Fold the side along the length of the filling over the filling, tuck in both ends, and roll neatly. Keep the roll tight as you assemble.
7. Mix 1 egg in small bowl to moisten the other side of the wrapper to seal the edge. Cover the rolls with plastic wrap to retain moisture.
8. In a wok/pan add oil enough to submerge the lumpia’s. (add oil to 1/2 inch depth, and heat for 5 minutes.)
9. Bake the lumpia’s golden brown. (Fry the rolls for 1 to 2 minute)
10. Let it cool in a drain or paper towels (to let some oil leak off it)
11. Serve immediately & enjoy.
