Today on Booze On The Rocks I show you how to make a Royal Hawaiian. This is a Tiki drink made with gin. In this case, we float the gin on top to give us a beautiful purple layer. which works really good as the Empress 1908 Gin has citrus notes that blend with the lemon juice, orgeat, and pineapple juice. The Royal Hawaiian is a great tasting Tiki Cocktail that is very easy to drink, especially on a hot day. Tell me what you think.

ROYAL SUNSET
1.5 oz/45 Empress 1908 Gin
1 oz/30 ml Pineapple Juice
.5 oz/15 ml Lemon Juice
.5 oz/15 ml Orgeat Syrup ****
Method
1. Add all ingredient.s except gin to the shaker tin.
2. Whip shake with ice for 10 seconds.
3. Free pour into a highball over crushed ice.
4. Slowly pour the Empress 1908 Gin so it floats on top.
5. Garnish with two pineapple fronds.
**** ORGEAT SYRUP

8 oz/240 Chopped Almonds
12 oz/360 ml Sugar
10 oz /300 ml Water
1 Tsp/5 ml Orange Flower Water
1 oz/30 ml Brandy
Method
1. Add water and sugar to sauce pan and heat until clear.
2. Chop almonds into small bits and add to sugar syrup.
3. Simmer for three minutes and gradually increase temperature until mixture boils.
4. Remove from Heat and add Brandy and Orange Flower water to mixture.
5. Let sit for 3-8 hours.
6. Strain using two layers of cheese cloth or a nut milk bag, and bottle.
