Soft cookie dough wrapped around a rich, fudgy brownie center. Baked until golden, topped with melted chocolate and brownie chunks. Thick, gooey, and full of flavour.
Ingredient for Brownie
Unsalted butter 1/3 cup 70g
Chocolate ~2/3 cup 100g
Granulated sugar 3/4 cup 150g
Egg 1 large ~50g
Vanilla extract 1/2 tsp
All-purpose flour 1/3 cup 50g
Cocoa powder 1/4 cup 30g
Salt pinch ~1g
Instructions
1. Take 1/3 cup unsalted butter (70g) and 2/3 cup chopped chocolate (100g).
2. Put both in the microwave for 40 seconds.
3. Stir until fully combined and smooth.
4. In a separate bowl, add 3/4 cup granulated sugar (150g), 1 egg, and 1/2 teaspoon vanilla extract.
5. Beat for 2 minutes until light and pale in color.
6. Add chocolate and beat again until smooth.
7. Add 1/3 cup all-purpose flour (50g), 1/4 cup cocoa powder (30g), and a pinch of salt.
8. Mix until everything is well combined.
9. Line a loaf pan with parchment paper.
10. Pour in the brownie batter and smooth the top.
11. Bake at 375°F (190°C) for 15 minutes.
12. Let the brownie cool completely.
13. Refrigerate for 30 minutes before cutting.
Cookie Dough Ingredients
Unsalted Cold Butter 1/2 cup (113g)
Granulated sugar 1/4 cup (54g)
Brown sugar 1/2 cup (100g)
Egg (large) 1
Vanilla extract 1 tsp
All-purpose flour 2 cups (240g)
Cornstarch 1 tbsp (8g)
Baking soda 1/2 tsp (3g)
Baking powder 1 & 1/2 tsp (8g)
Salt 1/2 tsp (2g)
Instructions
1. In a bowl, add 1/2 cup unsalted butter (113g), 1/4 cup granulated sugar (54g), and 1/2 cup brown sugar (90g).
2. Mix until creamy.
3. Add 1 large egg and 1 teaspoon vanilla extract.
4. Beat until smooth.
5. Add 2 cups all-purpose flour (240g), 1 tablespoon cornstarch (8g), 1/2 teaspoon baking soda (3g), 1 and 1/2 teaspoons baking powder (8g), and 1/2 teaspoon salt (2g).
6. Mix until a dough forms.
7. Scoop into 6 equal portions.
8. Roll each portion into a ball.
Assembly & Bake
1. Cut the cooled brownie into small squares.
2. Flatten each cookie dough ball slightly.
3. Place a brownie dough ball in the center and wrap the cookie dough around it.
4. Bake at 375°F (190°C) for 15 minutes.
5. Let them cool completely.
Topping & Garnish
1. Melt 1/2 cup chocolate (85–90g).
2. Spoon or drizzle the melted chocolate over each cookie.
3. Garnish with chopped brownie edges.
4. Finish with a final drizzle of melted chocolate.
