Khaujpoob Tso (Fresh Vermicelli Noodles with Blanched Vegetables and Spicy Sauce)

Ingredients:
1. 1 Bag 16 oz rice flour
2. 1 Bag 14 oz tapioca starch
3. 5 Cup water
*Combine #1 and #2 as the dry ingredients together in the mixing bowl.
Water Roux:
1. 1 Cup rice flour from the 16 oz bag above.
2. 5 Cup water from above.
*Mix the ingredients well together and cook until bubbles forming in the pot. Let Water roux cool for 20 to 25 minutes.
*Add water roux with the dry ingredients. Combine it well together and use kitchen aid to mix the batter for 4 to 5 minutes. Batter should be soft and look like cool whip texture.
Spicy sauce ingredients:
1. 1 Tablespoon sugar
2. 1/4 Cup boiling hot water
*Mix sugar and hot water together until sugar dissolve and set aside to let it cool.
3.3 Garlic cloves
4. 7 to 8 Thai chili peppers
5. 4 Tablespoon Lucky fish sauce
6. 3 Tablespoon lime juice
7. 1 Teaspoon mushroom seasoning
8. Cilantro
