Brunswick Stew
Ingredients
4 tablespoons (1/2 stick) butter
Heaping TSP minced garlic from jar
1 large Vidalia onion, finely chopped
1 can 15 oz fire roasted tomatoes undrained
1 can 15 oz crushed tomatoes
1 box Swanson chicken stock
1 1/2 cups Sonny's sweet barbecue sauce (see pic Publix carries it)
2 tablespoons Worcestershire sauce
1 tablespoon light brown sugar
1/4 teaspoon cayenne pepper
1 1/2 pounds smoked pork or chicken(I used both) cut or torn into chunks
16 oz bag frozen corn kernels
16 oz bag frozen baby lima beans
Diced potatoes (about 4 medium)
Pinch salt and ground pepper
Hot sauce to taste it go light so you can wait till serving to get each person's personal heat preference.
Directions
Sauté onions until soft in melted butter Add chicken stock, barbecue sauce, Worcestershire, brown sugar, cayenne, smoked meat, diced potatoes, crushed tomatoes, lima beans, corn and a big pinch of salt and pepper. Bring the mixture to a boil, reduce to a simmer and cook over medium-low until thick, about 1 1/2 hours, stirring on occasion. I had to add water a few times too. Serve with hot sauce, cornbread or soda crackers. Mexican cornbread is really good with it
