Ingredients:
Brinjal/Baigana – 3 no
Garlic – 12-15 cloves (peeled)
Onion – 1 medium (finely chopped)
Tomato – 1 medium (finely chopped)
Green chilli – 1–2 (chopped)
Mustard oil / refined oil – 2 tbsp
Maggie masala-1tsp
Salt – to taste
Coriander leaves – for garnish
Preparation:
Prepare baigana – Wash and make 2–3 deep side cuts (don’t cut fully).
Stuff garlic – Insert the peeled garlic cloves into the cuts. Apply a little oil all over.
Roast – Place the baigana directly on flame / in oven. Roast until skin is fully charred and garlic inside also burns slightly (this gives the smoky burnt flavor).
Cool & mash – Once roasted, let it cool. Peel off the burnt skin, mash the baigana along with the roasted garlic.
Fry onion & tomato – Heat oil in a pan, add chopped onion and fry golden. Add chopped tomato & green chilli, fry till soft.
Add baigana – Put the mashed baigana-garlic mixture, add salt, mix well and add maggie masala and cook 3–4 minutes on low flame.
Finish – Garnish with fresh coriander and a drizzle of raw mustard oil (optional).
