・Hiyashi Chuka Sauce
2 tablespoons sugar
3 tablespoons rice vinegar
3 tablespoons chicken broth
(or 1 teaspoon chicken soup paste
dissolved in hot water)
3 tablespoons soy sauce
1 teaspoon sesame oil
1 teaspoon toasted white sesame seeds
・Optional Rich Sesame Sauce:
½ of Hiyashi Chuka sauce
1 tablespoon sesame paste or tahini
1 teaspoon peanut butter
(for extra richness and creaminess)
・For the Toppings:
1 cucumber
1/2 teaspoon salt
1 tomato, cut into wedges
3–4 slices of ham, thinly sliced into strips
1 egg
1/4 teaspoon salt
1/2 teaspoon sugar
1/2 teaspoon potato starch
dissolved in 1 teaspoon water
6–8 shrimp, deveined and peeled
1 teaspoon sake
3–4 crab sticks
Cooked shiitake mushrooms ※optional
(leftovers from dashi making,
simmered with soy sauce and sugar)
・For the Noodles:
12-14 oz (350-400 g)
fresh Chinese-style noodles (chukamen)
・To Serve:
Japanese mustard (karashi), optional
