CHAKRI RECIPE by EVERYTHING BUT PASTA (RECIPE BELOW!):
I N G R E D I E N T S :
6 cups rice flour
3/4 cup besan flour
2 tbsp sugar
1 tsp citric acid
2 tbsp salt
1 tbsp turmeric powder
5 tbsp sesame seeds
4 oz margarine
2 cups yogurt
6 green chillies and 1/2 cup cilantro - blended
1 tbsp minced garlic
D I R E C T I O N S :
1. Combine the rice and besan flour and give it a good mix. Then sugar, citric acid, salt, turmeric powder and the sesame seeds. Mix all the ingredients well and then add the margarine. Mix the margarine until a fine crumbly mixture forms. Now combine the 2 cups yogurt, 2 cloves garlic with 6 chillies and 1/2 cup cilantro which have been blended together. Add the wet ingredients to the dry mixture and form a dough. If the dough is too crumbly, add another 1/4 to 1/2 cup of yogurt. The dough should be soft. Cover with a towel and let it sit for 10-15 mins.
2. Using the Chakri machine with the star shaped plate, add enough dough in the cavity to fill it. Close the lid.
3. On a large parchment paper, form the chakri with a circular motion. Make several of them before starting to fry.
4. To fry the chakri, heat enough oil in a wok to about 370 degrees F. Using a flat turner/flipper, pick up the chakri in one motion and gently drop it in the oil. After a couple minutes, turn the chakri and cook on the other side. Once golden remove to a paper towel lined tray.
5. Continue until all the chakri has been fried and enjoy!!!
