A popular recipe from the Gujarati cuisine of steamed dumpling made using moong dal flour.
MAG NU KHICHU
Ingredients
1½ cups green gram (moong) flour
1 teaspoon green chilli paste
1 tablespoon white sesame seeds (safed til) + for sprinkling
Salt to taste
¼ tablespoon papadkhar
2 tablespoons oil + for greasing, applying and drizzling
Red chilli powder for sprinkling
Method
1. Heat 2½ cups water in a non-stick pan. Add green chilli paste, sesame seeds, salt, papadkhar and bring to a boil.
2. Add oil, flour, mix well and cook for 4-5 minutes, stirring continuously. Remove from heat and set aside to cool.
3. Grease a steel plate with oil and apply some oil to your palms. Divide the mixture into equal portions, shape into balls and make a cavity in the centre.
4. Heat sufficient water in a double-boiler. Transfer the plate to the double-boiler and steam for 5-7 minutes.
5. Remove from heat, transfer to a serving plate, drizzle oil, sprinkle chilli powder and sesame seeds and serve immediately.
