Ingredients (converted to grams):
• Arugula – 280 g (roughly chopped, or use baby arugula)
• Feta cheese – 115 g (use any cheese you love)
• Pistachios – 115 g, shelled
• Pomegranate seeds – 55 g
• Oranges – 1 medium, peeled and sliced any way you like
• Grapefruit – 1 medium, peeled and sliced
• Fresh mint leaves – 10 leaves

Dressing:
• Extra virgin olive oil – 85 g
• Lemon juice – 28 g
• Honey – 2 tbsp (42 g)
• Dijon mustard (optional)– ½ tsp (about 3 g)
• Salt – 1 tsp (5 g)
• Freshly ground black pepper – a pinch
• Fresh mint – 1 oz (28 g) finely chopped

How to make it :

1. Roughly chop the arugula (or use baby arugula).


2. Add pomegranate seeds, orange slices, grapefruit slices and fresh mint.


3. Add crumbled feta and pistachios.


4. In a separate bowl whisk olive oil, lemon juice, honey, mustard, salt, pepper and chopped mint.


5. Pour the dressing over the salad and mix gently. Your festive luxury bowl is ready.
