Thai Curry with Peanut Tofu - Everyday Jane

This is an easy weeknight Thai vegetable curry with the most delicious peanut tofu ever! The base is a home made panang curry past from Marions Kitchen: https://www.marionskitchen.com/thai-p.... I made a huge double batch and stored in the freezer for MONTHS. Feel free to sub any store bought thai curry paste. Hope you give it a try!
Ingredients:
Vegetable Curry:
1 tbsp olive oil
1 1/2 tbsp panang curry paste
1 diced carrot
1 cup green beans cut in a half
half a head of broccoli
1 asian/japanese eggplant
1 small red pepper (bell pepper, or sweet italian)
1 can (400ml) of good coconut milk
400ml water
1 tbsp fish sauce
1 tbsp honey or palm sugar
1 tbsp lime juice
Tofu:
1 block of extra firm tofu, dried with a kitchen/paper towel and cubed
salt
olive oil
Tofu Peanut Sauce
1 tbsp soy sauce
1 1/2 tbsp peanut butter
1 tbsp honey
1 tbsp lime juice
