The process begins with sourcing ripe, high-quality mangoes that meet strict standards for color, maturity, and texture. After sorting and removing defective fruit, the mangoes move through a three-stage washing system: high-pressure rinsing, ozone or chlorine sanitizing, and UV purification to eliminate 99.9% of microorganisms.
The cleaned mangoes are peeled, de-seeded, and separated using precision machinery to maximize yield. The pulp is then finely milled and screened to remove fibers, creating a rich, velvety puree. A vacuum deaeration step ensures vibrant color retention and prevents oxidation. The puree is gently heated to stabilize enzymes, balance viscosity, and blend in ingredients such as sugar, citric acid, vitamin C, or stabilizers.
High-pressure homogenization gives the product its premium smoothness, followed by pasteurization or UHT sterilization for safety and shelf life. After rapid cooling, the puree is hot- or cold-filled into pouches, bottles, or industrial drums, then sealed, labeled, and batch-tracked.
Strict QC checkpoints verify color, Brix, pH, texture, and microbiological safety. The result: a naturally sweet, brilliantly colored mango puree ready for global distribution.
