Have you ever tried whipping the eggs for brownies or adding cherries with brandy? This is the chef's version of fudgy cherry brownie, a real treat!

Ingredients (for one 11x20cm mold)
Cherry 70g
Brandy 10g
Water 10g
Sugar 10g
Pectin NH 0.5g
Lemon juice 4g
Dark chocolate 110g
Butter 65g
Egg 95g
brownsugar 70g
AP flour 18g
Cacao powder 6g
Rinse the cherries in water, and remove the pit by cutting it in half. In a small saucepan, heat the cherries until warm, then add brandy and water. Cook until slightly softened. Let cool to ~40C. Mix sugar and pectin and add them to the cherries. Cook over medium heat until the juice is thickened. Add lemon juice and stir. Set aside for later.
Preheat the oven to 170C. Melt butter and chocolate together in a microwave, then mix until homogenous. In a separate bowl, add brown sugar to the egg and warm gently over a water bath to ~38C. Whip on high speed until the mixture is whitened and airy. Add the chocolate mixture and whip on high speed until homogenous. Sieve the cacao powder and flour into the wet mixture and gently fold until well incorporated. Pour the batter into a mould and place the cherries on top. Bake in preheated oven for 15min. Let cool completely before removing it from the mould. Can be served warm or fridge cold.
