This recipe is my go-to when I am craving something vegan that's easy to make, this 3 ingredients vegan sweet potato Gnocchi with SAGE BUTTER will no disappoint you.
3 Ingredient Vegan Sweet Potato Gnocchi with sage butter
420gm SWEET POTATO
4 FRESH SAGE SPRIGS
2 TBSP VEGAN BUTTER
¼ TSP TABLE SALT
PINCH OF SEASALT TO TASTE
120GM PLAIN FLOUR
METHOD:
USING A FORK POKE HOLES ALL AROUND THE SWEET POTATO AND PUT IN MICROWAVE FOR 3MINS
(I AM USING A 800WATT MICROWAVE ON FULL POWER)
TAKE OUT TURN THE POTATO OVER AND MICROWAVE FOR ANOTHER 3 MINS.
TAKE OUT AND LET IT COOL FOR 5-10MINS(IT WILL LET THE EXCESS STEAM ESCAPE AND COOL THE POTATO)
MASH THE SWEET POTATO WITH A FORK AND ADD THE FLOUR LITTLE BY LITTLE AS IT WILL PREVENT IT FROM CLUMPING, ADD THE SALT AT THIS POINT.
DEPENDING ON THE MOISTURE LEVEL OF SWEET POTATO YOU MIGHT NEED TO ADD MORE FLOUR. IT SHOULD BE SOFT TO TOUCH BUT NOT AT ALL STICKY
PORTION, ROLL, AND SHAPE THE GNOCCHI AS PER THE VIDEO.
HEAT A POT A WATER UNTIL BOILING, ADD 2 BIG PINCHES OF SALT. ADD A LITTLE GNOCCHI AT A TIME. IT WILL SINK FOR THE FIRST FEW MINUTES, ONCE IT STARTS TO RISE, THAT MEANS ITS COOKED.
LIFT AND PLACE ON A PLATE LINED WITH PAPER TOWEL TO GET RID OF THE EXCESS WATER. LET THE WATER COME TO A BOIL AGAIN AND DROP ANOTHER SMALL BACTH. MAKE SURE TO COOK IN SMALL BATCHES AS YOU DONT WANT TO OVERCROWD THE POT.
WHEN YOU ARE READY TO EAT,IN A PAN HEAT BUTTER, ONCE IT STARTS TO SIZZLE ADD THE GNOCCHI AND SAUTE IT UNTIL IT CARAMALSES, SHAKING THE PAN OCASSIONALLY.
ADD THE SAGE, LET IT COOK FOR ANOTHER 1-2 MINS, SPRINKLE SOME SEA SALT AND SERVE HOT.
