Agave nectar, anyone?

Three days ago I went in the greenhouse and noticed (how had I not seen this before?) that an enormous flower stalk had extruded from the top of my Agave havardiana and was already pushing up on the top of the greenhouse. I had to try to pull it over because it was piercing the greenhouse plastic, and its a 2-layer inflated affair, so I couldn't really make a hole in the top of the greenhouse. Attaching a come-along to the stalk, I cranked and cranked but instead of bending, it broke off at the base and nearly speared me like I was jousting with it! The thing weighs 150 pounds, like a beached whale. The contents are fructose-rich and edible raw, very sweet and starchy. I'm making agave nectar. It was the least I could do.
