FISH CROQUETTES
Ingredients
Boneless fish 400 gm cut into small cubes
Potatoes 2 boiled and mashed
Bread slice 1 ground into bread crumbs
Spring onion finely chopped ½ cup
Butter 1 ounce
Chopped garlic 1 tsp
Soy sauce 1 tsp
Siracha sauce 1 tbsp
Black pepper ½ tsp
Salt 1 tsp
Garlic powder ½ tsp
Mixed herbs ½ tsp
Cream cheese 1 tbsp
Mayonnaise 1 tbsp
Ingredients to Coat
Flour as required
Beaten eggs with 2
Salt and pepper a pinch
Bread crumbs as required
Oil for deep frying
METHOD
Heat butter in a pan, fry garlic and spring onions, add fish pieces, cook till done, mash boiled potatoes with a spoon, transfer to a bowl, add all the remaining ingredients, shape into croquettes, coat in dry flour, then dip in eggs, roll in bread crumbs, deep fry, serve with ketchup or tartar sauce.

AFGHANI CHOPS FRY
Ingredients
Mutton chops 750 gm
Ginger garlic 2 tbsp
Green chili paste ½ tbsp
Salt 1 tsp
Black pepper 1 tsp
Soy sauce 1 tbsp
Water 2 cups
Ingredients to Coat
Flour ¾ cup
Salt ½ tsp
Black pepper ½ tsp
Chicken powder ½ tsp
Eggs 2 beaten
Bread crumbs 2 cups
Ingredients to Fry
Eggs beaten 2 with
Water 2 tbsp
Corn flour 1 tbsp
Salt ¼ tsp
Oil for deep frying
METHOD
Put chops, ginger garlic paste, salt, pepper, soya sauce, green chili paste with water, cook in a pressure cooked till 90% done, cool. Now mix salt, pepper and chicken powder in flour, pour the cooked chops with this flour, beat eggs and dip the floured coated chops in egg, finally coat in crumbs. Heat oil in a pan, meanwhile beat eggs, corn flour and water very well, dip the crumbed coated chops in egg wash and deep fry.

TURKISH BEAN SALAD
Ingredients
Cooked white beans 1 ½ cup
tomatoes chopped into tiny cubes 2
capsicum chopped into tiny cubes 1
onion sliced 1
Chopped coriander 2 tbsp
Pomegranate syrup 3 tbsp
Salt ½ tsp
Coarsely crushed black pepper ½ tsp
Lemon juice 2 tbsp
Sumac 2 tsp
Toasted walnuts a handful
Olive oil 2 tbsp
To Make Pomegranate Syrup
Pomegranate 2 cups
Sugar ½ cup
Lemon juice 2 tbsp
METHOD
Cook all together, simmer for 1 hour till the syrup becomes thick.
TO MAKE SALAD
Assemble all the ingredients in a bowl, toss well.
