FCM is proud to produce mature cheese from Camel milk for the first time in the history of cheese making . We don’t have any information If anyone did it ever in the world .
Reason
Camel milk cheese is relatively low in fat and it makes it hard to coagulate properly . The percentage of white protein ( casin) is only
5 % which not only resist coagulation but it gives very low yield . Even yogurt making is not a good idea if it comes to camel milk.
This hard to make cheese is not an attraction for cheese makers . However the benefits of camel cheese are numerous and I felt highly surprised to see that no one ever thought how great cheese it can be .
Unlike other kinds of milk, camel milk has low levels of sugar and cholesterol and high amounts of vitamins and minerals, such as:
Potassium
Iron
Copper
Magnesium
Vitamin C
Calcium

Camel milk is high in antioxidants, which help prevent damage to your cells that can lead to serious diseases such as cancer, diabetes, and heart diseases.
I Imran Saleh , am proud to understand the chemistry of camel milk , turning it into Mature cheese . We aged it for 3 months and another wheel is waiting to be matured for another 3 months to make it 6 month old delicacy.
Previously I had successfully produced camel feta which was an awesome product . Some soft cheese variants and now mature cheese. We are still in research phase to find out it’s complete benefits .
Soon we will launch this delicacy in supermarkets for sale .
Camel cheese is great for milk intolerant people or people on low fat diet .
