Foraging the Yard: Wild Violet Syrup and Tincture

I've wanted to do this for so long, but usually miss the window. If you have wild violets, give this a try. So fun! Note that while there are over 600 plants in the genus viola, all are edible (but not always delicious). Sweet violet, used here, is the source of violet perfume!
Wild Violet Syrup
2 cups sugar
1 cup water
1 cup violets
2 tbsp lemon juice
Heat sugar and water until boiling. Turn off heat and add violets. Stir, then let stand, covered, for 24 hours. Cool, strain, add lemon juice and serve with fizzy water, in lemonade, or in a cocktail in place of simple syrup.
Wild Violet Liqueur/Tincture
Cover wild violets with vodka and let stand for about a week before straining. Add to cocktails.
