It’s simple yet so special, the kind of meal that instantly makes your kitchen smell amazing and feels like home. Whether you’re making it for a cosy night in, a quick weeknight dinner, or to meal prep for the week ahead, this one-pot soup is always a winner.
FULL RECIPE:
Chicken Lemon Risoni Soup
Ingredients:
1 tablespoon extra virgin olive oil
1 medium shallot (or brown/red onion), finely chopped
5 cloves garlic, smashed
1 tablespoon butter
1 ¼ cups risoni (or orzo)
600g chicken tenderloins
1.5 litres chicken stock
2 cups water
1 cup grated parmesan
1 parmesan rind (optional but adds great flavour)
400g can cannellini beans, drained and rinsed
1 lemon, zested and juiced
120 g baby spinach
Cracked black pepper, to taste
Method:
1. Heat the olive oil in a large pot over medium-high heat. Add the shallot and cook until soft and fragrant. Lower the heat, then add the garlic and cook for another minute.
2. Add the butter to the pot. Once melted, stir in the risoni and cook for a minute or two until lightly coated and glossy.
3. Pour in the chicken stock and water, then add the chicken tenderloins and parmesan rind. Bring to a boil, then reduce the heat and let simmer gently for 10–15 minutes, until the risoni is tender and chicken is cooked through.
4. Remove the chicken tenderloins, shred them using forks, then return the shredded chicken to the pot.
5. Stir through the cannellini beans, fresh lemon zest, and lemon juice. Remove the parmesan rind. Add the grated parmesan and stir until melted and creamy. Fold in the spinach and let it wilt.
6. Taste and adjust the seasoning, add more lemon for brightness or parmesan for richness. Serve warm with extra cracked pepper and a sprinkle of parmesan on top.

This soup is perfect with thick slices of sourdough or crusty bread for dunking. You can also top it with an extra drizzle of olive oil, shaved parmesan, or sprinkle some chilli flakes for added kick.
