Last summer I ate and cooked this dish over and over again in Italy. The gnocchi are soft and pillowy, the sauce is bright and delicious, the cheese is… well… DELICIOUS!

Ingredients
-Russet potatoes
-00’ Flour (can sub all-purpose if needed)
-Egg
-Garlic
-Basil
-Fresh tomatoes
-Fior di latte or Mozzarella
-Parmigiano reggiano (optional but delicious)
-Passata or crushed San Marzano tomatoes
-Salt & Pepper
-EVOO
