Here are some of my tips to make the perfect popovers that won't collapse:
· I always use room temperature ingredients
· I make sure the oven is preheated at 425 °F degrees using an oven thermometer for accuracy
· I do not preheat my pan
· I whisk the warmish milk and eggs together first before adding the salt and flour
· I hand whisk all the ingredients together, I DO ensure all lumps are mixed
· I let the mix sit after mixing for 10-15 minutes (stir just before pouring into the pan)
· I fill the well-greased popover pan no more than 2/3 full
· I bake hot 425 °F for 30 minutes-lower temp to 350°F for 10 minutes and never ever open the oven until the time is completed
· I immediately piece the popovers on the top and 2 pokes on each side and let cool for 5-7 minutes before cutting them open to eat.

04:00 Bake for 30 mins. on a 425 degree oven, lower temp. to 350 for 10 mins.

04:30 Remove from oven and immediately pierce or poke a small hole in several places
