Today I’ll show you how I make mozzarella cheese from whole milk using white vinegar and a little salt. It’s a great way to extend the life of your milk and an even better excuse to have pizza for dinner.

We had a gallon of milk in the refrigerator that was at its expiration date and we needed to use it before it was too late, so we decided to make fresh mozzarella cheese.
Mozzarella is classified as an unripened cheese. It's a fresh, soft cheese, often made with the "pasta filata" method where the curd is pressed and stretched in hot water, resulting in a smooth, elastic texture. Mozzarella is usually used fresh and doesn't have to undergo a ripening or aging process such as cheddar or other hard cheeses but it can be frozen for up to a year to be used at a later time. It can be made from the milk of cows, sheep or goats, with each giving their own texture and taste.
