Many fruit juices can be cooked down to a thick caramel-syrup that's shelf stable and can be stored just like honey on the counter. Apple molasses is the most well known in the United States, but the basic process has been used around the world with many fruits, probably since humans learned to pick fruit and cook things over fire.
The version with pear juice here is made commercially in Turkey, the Netherlands, Germany, Belgium, China, and probably many more places. A home batch made with a 1/2 gallon like I do here won't have the nearly black color of commercial fruit molasses, but it's crazy delicious and easy to make.
