These Gluten Free S'mores Granola Bars came out really good and didn’t take much time to make. You probably even have all the ingredients in your pantry already. The taste was really good but they are pretty rich. I found that after filming the recipe I found cutting them into squares was a better option as opposed to bars.
Ingredients
• 1 Cup Smooth Peanut Butter, warmed for 15-20 seconds in the microwave
• ⅔ Cups Honey
• 2 ½ Cups Gluten Free Oats
• 1 Cup Mini Marshmallows
• 1 ½ Cup Chocolate Chips, divided
• 1 tsp. Vanilla Extract
• ½ tsp. Salt
• 1 Tbs. Shortening or Coconut Oil, if Desired
Directions
1. Line an 8x8 or 9x9 pan with parchment paper.
2. In a large bowl mix together the peanut butter, honey, vanilla and salt.
3. Stir in the oats, marshmallows, and 1 cup chocolate chips until fully incorporated.
4. Add mixture to the prepared pan and press into an even layer
5. In a microwave safe bowl, melt the remaining ½ cup of chocolate chips and shortening together in 20-30 increments at 50% power until smooth.
6. Spread over granola mixture.
7. Chill for 1-2 hours until the chocolate has set.
8. Cut into bars and enjoy.
