The proper way to season a new wok before using it for stir fry. This is how all the pofessionals season their new wok before using it for the first time.
Before a new wok can be used for the first time; it needs to be seasoned to clean away any metal residue in the wok that may come off during cooking. The best way to do this is by burning the wok to a high temperature before washing it thoroughly. Below is how I season my carbon steel wok for the first time prior to use.
Seasoning a wok at home is similar procedure although it takes longer because of the relatively low power of a home stove. Basically place the wok on a burner and allow it to burn the wok until you can see a change in colour. Then move to another side and continue so that all the surface of the wok are fully burnt. Was with plenty of water and wipe dry. Put the wok back on the stove again to heat, when it is fully dried and hot add some vegetable cooking oil over the inside of the wok . Pour away any excessive oil and wipe dry with paper towel to complete.
