This easy tofu scramble recipe is a healthy, flavorful, plant-based breakfast made with simple ingredients, perfect for brunch or a quick savory meal.
The tofu is cooked with onion and red, yellow or orange bell pepper, then seasoned with my perfect tofu scramble seasoning (recipe below) and finished with black beans for extra protein and texture. It’s simple, packed with protein and fiber - no eggs, no dairy just full of plant-based goodness.

🥣INGREDIENTS:
1 block of extra firm tofu (pressed to remove moisture)
1 colored pepper (red, yellow or orange), diced
1 medium onion (white or yellow), chopped
2 tablespoons tofu scramble seasoning (see below)
1 can black beans, drained and rinsed
👩🍳DIRECTIONS:
1. In a skillet, water sauté over medium high heat the peppers and onions until almost tender.
2. Add the pressed tofu, lower heat to medium, and break the tofu into pieces while stirring
3. Keep mixture moving for about 2-3 minutes, adding a splash of water if it begins to stick.
4. Toss in black beans and continue stirring until the beans are heated through.
🍽️Great served with taco sauce, pico de gallo or salsa. With toast, tortillas, in crispy taco or tostado shell, with potatoes or enjoy it straight from the pan.

2 teaspoons black salt (no other salt will work)
2 teaspoons black pepper
4 teaspoons smoked paprika
4 teaspoons onion powder
4 teaspoons garlic powder
3 tablespoons taco seasoning
4 teaspoons ground turmeric
Mix very well and store the unused seasoning in a tightly sealed glass container, preferably in a cabinet or pantry.
