A Super-Easy Potato Recipe: Minced Pork & Potato Stir-Fry
This minced pork with potatoes is so delicious, it makes me stamp my feet—and it’s absolutely perfect with steamed rice!
Ingredients (Serves 2-3)
2 medium peeled potatoes (about 350g),
200g minced pork (80% lean recommended)
1 small bell pepper (red or green, diced)
2 stalks scallions (white & light green parts minced)
3 minced garlic cloves
1 tbsp cooking wine
1 tsp dark soy sauce
1 tbsp light soy sauce
1 tbsp oyster sauce
1 tsp salt (adjust to taste)
1 tsp chicken powder (optional)
3-4 tbsp cooking oil
6 tbsp water starch (mix 1 tbsp cornstarch with 5 tbsp water).
Cooking Steps
1.Cut potatoes into 1cm-thick slices, then strips, then small even dice.
Rinse with cold water to remove surface starch, drain well.
2. Heat 2 tbsp oil in a wok over medium heat; fry potato dice for 5-6 minutes until crispy outside, soft inside. Remove and set aside.
3.In the same wok (add 1-2 tbsp more oil if needed), stir-fry minced scallions and garlic over medium heat for 30 seconds until fragrant.
4.Add minced pork, stir-fry 2-3 minutes until browned (break up clumps). Pour in cooking wine and dark soy sauce, stir 30 seconds to color evenly.
5.Add fried potatoes and diced bell pepper; stir 1 minute. Then add light soy sauce, oyster sauce, salt, and chicken powder (if using); mix well.
6.Pour in water starch, stir-fry 30 seconds to 1 minute until sauce thickens and coats ingredients.
7.Turn off heat—serve hot!
