Ramassery idli is unique in ingredient, texture and cooking technique. But perhaps what makes it most interesting is that its recipe is carefully preserved by four families living in the village of Ramassery, near Palakkad, in Kerala. Traditionally, the Ramassery idli is made only with rice sourced from Palakkad; the idlis are then cooked over a muslin-covered earthen pot, and de-moulded using a specific leaf that lends a subtle fragrance to the rice cake. The idlis are served with podi made from Palakkadan Matta rice and a complex blend of spices.
Ingredients for Ramassery Idli
1 cup Idli rice
1 cup ponni rice
1 cup Urdu
½ spn Fenugreek Seeds
salt
Instructions
Soak rice and Urdu seperately in Urdu add Fenugreek Seeds after 30 transfer Urdu to refrigerator until the time we grind it no need for the rice to keep in refrigerator. After soaking for 8 hrs we will start grinding it . In to the grinder add Urdu frist do not add water in to it use ice instead. after grinding the Urdu nicely we can start grinding the rice use the water to grind the rice. after grinding the rice perfectly combine both the batter together and blend it using your hands and keep it for overnight. In the morning we can start preparing idli heat a banana leaf and save it for later then heat idli pan then keep the banana leaf into it and to that pour the batter and shape it and close it with the lid after sometime our idli will be ready and take it out from the pan and remove the banana leaf that is it our very easy and tasty ramassery idli is ready to serve.
Ingredients for coconut chutney
6 dried chilli
1 pc ginger
10 shallots
2 spn kadala
2 pidi coconut
salt
instructions
Grind all the ingredients together and transfer it to a curry chatt to that add required amount of water and heat the pan do not cook it for a long time. then we can add varavu on the top of it .
Ingredients for Tomato chutney
4 Tomato
½ spn Urdu
½ spn Fenugreek Seeds
½ spn whole pepper
10 shallots
5 dried chilli
Curry leaves
1 pc ginger
sugar for taste
coconut oil
salt
Instructions
Heat a pan and add coconut oil after that add Urdu then add Fenugreek Seeds and pepper after frying it add shallots ginger dried chilli and curry leaves and fry well to that add tomato and mix well after that add salt and sugar into it and cook for a couple of minutes. After that let it to cool down after cooling it down we can transfer it into a blender and grind it well that is it our very easy and tasty tomato chutney is ready to serve.
