Succession and Billions are comparable shows in a lot of ways, both being about wealth, power, and the people who inhabit those worlds, but Succession is the far superior show, and a similar scene in both shows illustrates exactly why. For those who have seen both shows, they probably understand why Succession is better. However, maybe you haven't seen Succession, or maybe you only caught an episode or two, or maybe you just can't put your finger on why exactly Succession and Billions feel like they were made in the same lab, but one deserves more plaudits. This one specific scene, should help you understand the difference between the two. Ortolan Bunting Is A Songbird Used In A Controversial French Dish For this discussion, it's important to understand what Ortolan is. Ortolan bunting is a tiny songbird that migrates between Western Europe and Africa and is the center of a controversial gastronomic dish (via AtlasObscura). Caught ortolans are kept in dark cages, which tricks the bird into gorging itself. Once doubled in size, the birds are drowned in Armagnac brandy, plucked, roasted, and eaten whole, feet first. Diners traditionally wear a white towel over their head while they do so. This indulgent practice is illegal in many countries and the centerpiece of memorable Billions and Succession scenes. The Ortolan Scene In Billions Is Obnoxious And Surface Level In season 3, episode 6, "The Third Ortolan", Bobby Axelrod (Damian Lewis), Wags (David Constabile), and real-life celebrity chef Wylie Dufresne sit down for a last supper of sorts, as Bobby plans to surrender to the authorities the next day. The scene starts with a chopping guitar riff before Wylie explains the dish in front of them. Wylie tells Bobby and Wags the meal they are about to eat was originally reserved for royalty. Wags says the towel over their heads is meant to keep the aromas from escaping and to hide the shameful and depraved act from god. There are candles on the table and each character talks about the meal as if they are having a religious experience.
