The thermodynamics of protein folding is a very interesting concept to understand, but it comes with the confusion of entropy changes. When we look at the entropy change during the process of protein folding, it seems to be decreasing. This decrease is surprising as protein folding is considered a spontaneous process where the entropy should increase.
