These Asian style chicken meatballs are not only mouthwatering but also easy to make. Serve them with rice or stir fry noodles and enjoy!
Recipe: Easy Chicken Meatballs
Ingredients:
450g (15.9 oz) of ground chicken breast
1 medium egg
50g (½ cup) of breadcrumbs
2 spring onions (green onions), chopped
1 teaspoon of grated garlic
1 ½ teaspoon of chilli flakes
1 teaspoon of salt
½ teaspoon of grated ginger
4 tablespoons of honey
6 tablespoons of apple cider vinegar
4 tablespoons of soy sauce
Roasted sesame seeds and coriander to garnish
Instructions:
1. In a large bowl, add chicken, breadcrumbs, egg, spring onion, garlic, salt and chilli flakes. Mix until well combined.
2. Preheat the oven to 180 °C / 160 °C fan / 350F / gas mark 4.
3. Rub the palms of your hands with oil and make small balls form the chicken mixture about 1 ½ tablespoons each. Place them on a baking tray lined with parchment paper.
4. Bake for 25 minutes. Set aside.
5. To a small bowl, add soy sauce, apple cider vinegar, honey and ginger. Stir until well combined.
6. On medium-high heat, heat the sauce for about 4 ½ minutes, stirring occasionally until bubbles starts to form. Add the meatballs, give a quick stir and simmer for 1 to 2 minutes. Cover and cook for 5 minutes. Uncover and mix. Turn off heat.
7. Serve with rice. Garnish with sesame seeds and coriander. Enjoy!
Notes/Tips:
The chicken meatballs can last in the fridge in an airtight container for up to 3 days.
Chilli flakes can be omitted if you do not like spicy.
Ground chicken thighs can be used instead of chicken breast.
