White Sugar Rice Cake or Rice Sponge Cake is a Chinese pastry made from rice flour, sugar, water and yeast. The cake is normally moist and spongy texture. The taste is sweet and sometime slightly sour due to fermentation of rice batter.
Ingredients:
Yeast mixture
1 1/2tsp [5g] Yeast
1 Tablespoon Water
Sugar syrup
1/2cup [120g] Sugar
1 1/4cup [310ml] Hot Water
Batter
1 2/3cup [250g] Rice Flour
2/3cup [190ml] Water
