🧁 Keto Queso Breakfast Hash Cups
Makes: 12 cups
Serving size: 1 cup + ~1 tbsp queso

🧂 INGREDIENTS
Cauliflower “Hashbrown” Base:
2 cups riced cauliflower, microwaved & squeezed dry
1 ½ cups shredded mozzarella
½ cup grated parmesan
1 egg
2 tbsp melted butter or bacon grease
½ tsp garlic powder
Salt & pepper to taste
Egg & Sausage Filling:
6 large eggs
¼ cup heavy cream
¾ cup cooked breakfast sausage, crumbled
½ cup shredded cheddar
2 oz cream cheese, cubed (optional but delicious)
Optional: 2 tbsp finely diced onion or bell pepper
Optional: jalapeño slices or bacon bits for topping
Smoky Queso Sauce:
3 oz cream cheese
½ cup shredded pepper jack
¼ cup heavy cream
1 tbsp diced green chiles
1 tbsp bone broth or water (optional, to thin)
¼ tsp smoked paprika
⅛ tsp cumin
Optional: dash of hot sauce or pickle juice for tang
👨🍳 INSTRUCTIONS
Preheat oven to 375°F. Grease a 12-cup muffin tin.
Mix cauliflower base and press into cups to form a crust. Bake 15 min.
Whisk eggs & cream, add sausage, cheddar, and cream cheese cubes.
Pour egg mix into cups. Top with jalapeños or bacon if using.
Bake 15–17 min until set. Let cool before removing from pan.
Make queso by melting all ingredients together in a saucepan or microwave.
Store cups and queso separately. Reheat and drizzle as needed!
