Mixed Millet Dosa/Idli/Uthappam. International Millets Year 2023. ദോശ ഇഡലി ഊത്തപ്പം
Ingredients
Finger millet/ Ragi 250gm
Foxtail millet 250gm
Urud dal 85gm
Semolina 60gm
Flax seed 60gm
Fenugreek/ methi seed 1 Tbsp
Preparation:
Thoroughly rinse and wash the millet mix, add water, and soak 6 hours or overnight.
Soak and keep semolina and half of the flax seeds separately.
Make the batter in a grinder adding the soaked millet and half of the flax seeds.
Add the soaked semolina and leftover flax seeds to the batter.
Mix the batter with your hands for 2-3 mins so that the wild airborne yeast gets released into the batter helping in natural fermentation.
Rest the batter for 6 hours/ overnight.
Season the batter with pink salt.
Heat a cast iron tawa, and season with wood-pressed gingelly/ sesame oil.
When the tawa is heated, pour a ladle of tawa nu batter and spread it as thin as possible to make it crispier.
Brush some desi ghee or wood-pressed oil(for vegans) for the better assimilation of fat-soluble vitamins.
Your crispy and nutritious millet dosa is ready. this dish is best enjoyed with sambar, chutney, etc.
This versatile batter can make other dishes like Idli, uthappam, etc.
