Danish Honey Hearts | Fermented Gingerbread | Honninghjerter

Danish honey hearts, or Honninghjerter, are soft gingerbread cookies made with flour and honey that's fermented for a whole month before baking. This style of gingerbread dates back to the end of the 1700s. Special old-style raising agents are used called potash and hartshorn salt. Then, after baking, they're covered in a layer of dark chocolate and decorated with a picture of St. Nicholas.
