Creamy milk chocolate custard (Milk chocolate cremeux)

Ingredients:
160ml cream (full fat)
160ml milk (soy or almond)
15gr sugar
10gr starch
250gr milk chocolate
Heat the cream and the milk to a boiling point. Meanwhile in a small bowl mix the starch and the sugar.
When the milk and cream starts to boil, pour two ladles into the starch/sugar mixture and whisk until no lumps remain then return to the milk and cream pot. Heat up until it starts thickening. Remove from the heat and whisk in the chocolate until silky.
