Bucatini Carbonara

Yield: 4 to 6 servings

Ingredients:
1 1/2 cups 1/4-inch diced pancetta
1 cup 1/4-inch diced yellow onion
Kosher salt and freshly cracked black pepper
5 large eggs
1 cup grated Parmigiano-Reggiano
1 pound bucatini pasta
1 tablespoon chopped Italian parsley

Directions:
Cook pancetta in a large nonstick skillet over medium heat until crisp, 5–7 minutes. Remove to a paper towel-lined plate. Add onions to the pan and cook until translucent, 3–5 minutes. Season with salt and pepper, then reduce heat to keep warm.

Separate eggs and whisk yolks with half the Parmigiano-Reggiano; season with salt and pepper. Add the mixture to the onions and stir well.

Cook pasta in salted boiling water until al dente. Strain and transfer directly to the bowl with the egg-onion mixture. Toss with tongs to coat, allowing residual heat to cook the eggs. Add about 3/4 cup pasta water to thicken the sauce. Fold in remaining cheese, pancetta (reserve some for garnish), and adjust seasoning.

Serve immediately, topped with reserved pancetta and parsley.
