Ingredient for filling:
-250g glutinous rice
-Store bought fried shallot 3 tbsp soaked in 5tbsp of oil
30g dried chopped dried prawn
4 Chinese mushroom
Half roll of diced Chinese sausage
2 tbsp oyster sauce
1 tbsp fish sauce
Pepper to taste b
Method:
1. Wash and soak 250g glutinous rice 4hrs or overnight in the fridge and Drain when using.
2. Heat 2tbsp of shallot oil (I used stored bought fried shallot and soaked in oil)
3. Add in 30g chopped dried prawns.
4. Mix in 3-4pieces of soaked and soften diced Chinese mushrooms.
5. Mix in half of diced fried Chinese sausage. Stir fry until it fragrant.
6. Add glutinous rice and Season with 2 tbsp oyster sauce/ 1 tbsp fish sauce and pepper
7. Stir fry until it is evenly mixed
8. Steam glutinous rice for 20 to 25 minutes, once it's cooked set aside to cool.
9. Pour in 1 can of drained braised peanuts, mixed well,
For the skin:
-400g rice flour + extra to dust
-80g tapioca flour
-1 tbsp caster sugar
-1/2 tsp salt
-560ml water
-2 tbsp cooking oil
-Few drops of Rose pink colouring
Method
1. In a mixing bowl, mix rice and tapioca flour, sugar & salt.
2. Add few drops of pink colour into hot boiling water. Slowly stir in the pink tinted hot water into the flour mixture until rough dough is formed.
3. Use hand (when dough cook down) to knead the dough till it’s pliable. Cover with a damp tea towel.
To assemble:
Method 1
-Take approx. 30g Of skin dough .
Roll each portion of dough and flatten it hold it like a bowl shape
-Fill the dough with the glutinous rice filling and shaped it into a triangle and fit it into the mould to seal.
Method 2
Dust png kueh mould especially its groove with a good sprinkle of rice flour.
-Take approx. 30g Of skin dough .
Roll each portion of dough into a large disk and place it loosely over floured mould.
-Fill the dough with the glutinous rice filling and flip the overhanging dough around the rim to cover the filling. Trim off excessive dough and seal by pinching the dough together.
Steam kuehs for about 15 mins with low heat or skin is soft.
