手工蛋餅 Handmade Scallion Pancake
材料:
中筋麵粉 300克
细鹽 3克
約70度溫水 170CC
蔥花 50克
雞蛋 2顆
Ingredients:
300g Medium strength flour
3g Fine salt
170 CC Warm water (around 70 degree Celsius)
50g Shredded scallion
2 Eggs
作法:
1.將麵粉及鹽置於鋼盆中。溫水倒入並拌勻。
2.用手揉匀約3分鐘至匀。用乾淨的濕毛巾或保鮮膜蓋好以防表皮乾硬,靜置放涼醒約30分鐘。
3.將醒過的麵糰揉至表面光滑。將麵糰分成5份,包入少許蔥花。靜置10分鐘。
4.將醒過的餅壓扁後桿開成圓型。平底鍋加熱後加入約1大匙沙拉油,放入蔥油餅小火將兩面煎至金黃酥脆。
5.將一顆雞蛋打勻,入鍋攤開,放上麵餅煎熟即可。
Preparation Method:
1. Place the flour and salt in a metal mixing bowl. Pour in the warm water and mix evenly.
2. Knead the dough for around 3 minutes. Cover with a clean damp cloth or cling film to prevent the surface of the dough from drying out. Set aside in a cool place to rest for 30 minutes.
3. Take the rested dough and knead until smooth. Divide the dough into 5 portions and enfold in a small amount of the shredded scallion. Set aside and rest the dough for 10 minutes.
4. Take the rested dough portions and roll out into rounds. Add a tablespoon of oil to a flat-bottomed pan and heat up, place in the scallion pancake and fry on both sides on low heat until golden.
5. Beat an egg, pour into the pan then place the fried pancake on top until the egg is cooked.
