Here is a delicious Thai peanut sauce that can be made in a jiffy!
Ingredients:
1 large onion or 4 shallots minced
2 cloves garlic crushed
1-2 lemon grass stalks minced
Sunflower oil
1 tablespoon chilli sauce
1 tablespoon tamarind purée or vinegar
1/2 teaspoon curry powder
1 tablespoon sugar
1 tablespoon ketchup
1/2 cup unsweetened chunky peanut butter
1 cup roughly crushed peanuts
1-2 cups coconut milk
