Fry Chicken Recipe
Ingredients:
2 chickens cut into pieces
1 1/2 tbsp paprika
1 tsp dried mustard powder
1 tsp garlic powder
1 tsp celery powder
1 tsp white pepper
1 tsp onion powder
1 tsp all spice
1 tsp ginger powder
1 tsp dried thyme
1 tsp cayenne pepper
1 1/2 tbsp salt
1 cup buttermilk
2 cups all purpose flour
1/2 tsp msg (optional)
oil for frying
Method:
1. Mix all spices and salt together
2. In a large bowl, season chicken with 3/4 of spice mix and buttermilk
3. Cover with plastic wrap and refrigerate overnight or for at least 2-3 hours
4. Mix flour with 1/4 of spice mix and dredge chicken in seasoned flour
5. Heat pot with oil to 300 degrees Fahrenheit and fry chicken pieces until golden brown
6. Drain on paper towel and then place pieces on wire rack in oven at 175 degrees Fahrenheit for 10-15 mins
Buttermilk Biscuits Recipe:
Ingredients:
3 cups all purpose flour
2 tbsp granulated sugar
2 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup shortening or margarine
2 tbsp melted butter
1 1/4 cup buttermilk
Method:
1. Mix flour, sugar, baking powder, baking soda, salt
2. Add softened shortening or margarine and rub into flour
3. Add buttermilk and knead to form a soft dough
4. Roll out dough on floured counter to about 1 inch thickness
5. Fold dough in half and cut out circles
6. Place on greased baking pan and brush with melted butter
7. Bake in a preheated oven at 450 degrees Fahrenheit for 15 mins
