I had an the opportunity to be in the kitchen as Chef Candela prepared this classic Italian dish with a gourmet twist. The chef uses a variety of tomatoes such as San Marzano, Corbara, and Piennolo. He also created 'fake cherry tomatoes' filled with liquid Parmigiano Reggiano cheese. More soon on the blog.
