Ube Halaya Cheese Pandesal – Soft Filipino Bread Rolls with Creamy Ube and Melty Cheese Filling
Ingredients
1 large egg
3 tbsp. sugar
1 packet active dry yeast or 2 tsp. instant dry yeast
1 cup fresh milk (warm)
1 tbsp. ube extract
3 cup (405g) bread flour
½ tsp. salt
3 tbsp. (45g) unsalted butter (melted)
Breadcrumbs (for coating)
Fillings
Cheese cubes
Ube halaya (1 tbsp. for each rolls)
Procedure
1. In a bowl, whisk flour and salt.
2. In a separate bowl, dissolve sugar into the lukewarm milk and put the active dry yeast. Wait until foamy (10 minutes).
3. Add egg and ube extract then mix.
4. Mix the ube mixture and the flour mixture.
5. Add melted butter and knead until smooth and elastic.
6. Transfer dough in a greased bowl. Cover and let it rise for an hour.
7. Deflate and divide into 15 equal pieces (or any desired quantity).
8. Shape into a ball. Flatten each piece and place 1 tbsp. of ube halaya and cheese at the center. Pull the sides enclosing the filling and pinch to seal.
9. Form again into a ball and coat with breadcrumbs. Place into a greased baking dish.
10. Cover and let it proof for 20 minutes.
11. Bake at preheated oven at 350F for 20 minutes or until slightly browned.
12. Remove from oven and serve while hot.
