Hidden Tokyo Food Gem: Tsukudani Tasting at 240‑Year‑Old Tamakiya

We LOVE this Tokyo institution! Nestled in Shimbashi, this shop has been around for over two centuries and still finds new ways to surprise customers. Tsukudani itself is one of Tokyo’s original foods – small bits of seafood, meat or seaweed simmered in soy sauce and mirin to create a sweet–savory preserved dish. It’s traditionally eaten with rice, but Tamakiya is changing the game.
The shop itself has a fascinating story – it was founded in 1782 and originally sold simmered black beans. The third‑generation owner introduced tsukudani, and even Albert Einstein became a fan of their shredded kombu. Today, 10th‑generation owner Kyoko Tamaki runs a tiny three‑seat counter, offering tasting courses and wine pairings to show that tsukudani can be more than just a rice topping.
