Donne Biryani is a famous Biryani native of Bangalore , Karnataka . “Donne” means big sized cups /bowls made from palm leaf . These are eco friendly disposable plates and cups. As Biryani is served on these plates/bowls it is popularly known as “Donne Biryani”.
Chicken Donne Biryani
jeera rice-1 1/2 cup (wash and soak for 1/2 hour)
For Biryani Masala
star anise-2 no.
cinnamon-1 cm long 3 pieces
black cardamom-1
stone flower- 1 pinch
green cardamom-2
kapok buds (marati moggu) - 4 no.
nutmeg- small pieces
mace - 1 pinch
cloves- 6 no.
fennel seeds- 1 tsp
cumin seeds- 1/2 tsp
bay leaf- 1 small
fry for 2 minutes and grind well
onion- 1 big
green chilly-4 to 6(as per taste)
mint leaves- 1/4 cup
garlic-10 cloves
ginger-1 inc long pieces
coriander leaves- 1/4 cup
grind well into fine paste
tomatoes-1 big
grind tomatoes into smooth paste
oil-5 to 7tsp
chicken (300gm)
turmeric powder-1/2 tsp
coriander powder-1 tbs
pepper- 1/2 tsp
biryani masala - 2 to 3 tsp
add the chicken into the hot oil fry for a minute and add the masala powder and continue frying for 2 minute.
add tomato paste fry well
add the green paste fry for 3 minutes
add biryani masala into the mix and add 1 cup of water cover it and cook for 5 minutes. Then add 2 cup of water and boil it, add rice into the boiled chicken curry .When the rice is 80% cooked place it on a tawa in low flame and close the vessel with well fit lid and keep some boiled water on top of that for 20 minutes. After 20 minutes ready to serve the tasty Donne biryani.
FOR KSHATRIYA KEBAB
garlic- 10 cloves
green chilly- 3
add few mint leaves and grind it
chicken-300 gm
chilli powder- 1tsp
coriander powder- 1 tsp
ginger paste-1 tsp
salt- 1 tsp
egg- 1
maida- 1 tsp
Corn flour - 11/2tsp
mix all together and keep it for 1 hour for marination . After 1 hour fry it into hot oil.
