Make the marinate
1.5 tbsp kashmiri chili
1/2 tsp turmeric
1 tbsp ginger
1 tbsp garlic
1/2 tbsp salt
2 tbsp hung curd
2 tbsp lime juice
1 tbsp black pepper
600 g chicken breast
refer for 2 hours
kashmiri chili powder /. food color
fry the chickenon both sides only 80% and the rest will be cooked later
fry for 7 mins on each side
to make masala
add oil in pan
add butter
oil is added so butter does not burn
add whole garam masala
2 cardamom
10-15 black peppercorn
1 star anise
2 bay leaves
mix well so all the flavors are infused in the oil
add 1 wholeopen black cardamom
8-10 cloves
mix
add 1 large red onion
garlic 4-5 large cloves
ginger 2 inch
green chilis - 4
10-15 cashews
4 red tomatoes -roughly slic ed
add some salt - removes all the water from the tomatoes and onions
cover and cook for 10 mins
all the tomatoes have wilted
2=3 inch cinnamon sticks
cool it down and make it a fine paste
add butter 25g
2 tbsp kashmiri chili powder
1/2 tbsp cumin powder
2 tbsp coriander powder
1/2 tbsp fennel powder
mix well
pour the ground masala into the pan
mix constantly or the cashews may burn
andkeep it on slow flame and combine together
fry the masala and let the oil ooze out
sautee for 5 minutes
now add the remaining marinade from the marinaded masala
let the masala fry on low medium flame
add some water so masala doesnt burn
you can sieve the masala if it is not finely ground
add required amount of water if you want the gravy to be thinner
mix well and taste for salt
cook for 5 mins
add 2 tsp garam masala
crush kasuri methi and add for extra flavor
add fresh cream
give it a mix
cook for 5 more mins
chicken will be fully cooked
add butter since it is butter chicken
garnish with fresh coriander
eat with naan roti rice
