ACHARI BAINGAN
Ingredients
Eggplant ½ kg round ones
Onion 1 large sliced brown
Tomatoes 2
Oil ½ cup
Salt 1 tsp
Turmeric ½ tsp
Chili powder 1 tsp heaped
Ginger garlic paste 1 tsp
Tamarind pulp ¼ cup
Green chilies 6 large ones
Achari masala as required
Chopped coriander leaves 2 tbsp
Ingredients for Temper
Curry leaves a handful
White cumin seeds 1 tsp
METHOD
Give cuts on brinjals keep aside in salted water, remove from water, fill the cuts with achari masala. Heat add curry leaves, cumin seeds, ½ cup water, ginger garlic paste, onion brown, fry till soft, add tomatoes, dry seasonings, fry well, add ¼ cup water, cook till oil comes on top, add brinjals, green chilies, leave it on dum, when brinjals tender, remove, serve with chopped coriander leaves.
Chicken Wali Daal
Ingredients:
Chicken (16 pieces) 1 kg
Gram lentil (boiled) 250 gram
Oil half cup
Clarified butter 3 tbsp
Cinnamon 1 stick
Cloves 4
Onions (chopped) 2
Lemon juice quarter cup
Garlic chopped 1 tbsp
Ginger (finely chopped) 1 tbsp
Tomatoes 3
Chili powder 2 tsp
Turmeric half tsp
Allspice 1 tsp
Coriander leaves (chopped) 1 tbsp
Green chilies (chopped) 1 tbsp
Method:
Heat oil and clarified butter add clove and cinnamon with chopped onion, garlic. Fry till onions lightly golden add chicken fry for 5 min add choperized tomatoes and dry seasonings fry till oils come on top. Add 1 cup water cover and cook till chicken tender. Open add boiled daal lemon juice, chopped coriander and green chilies cover and cook till done serve hot with Roti.
