Ragi or Finger Millet is a super grain, it's gluten free, rich in fiber that helps with weight loss and diabetes. Plus, It is a sturdy crop which means it can grow in high altitudes and withstand harsh weather conditions like droughts.
Today, we will make Ragi Halwa (also called as Sheera in Maharashtra) which is a tasty and nutrient dense recipe. You can eat it as breakfast, snack or a desert post meals.
Let's get started!
Recipe:
1. Take iron kadhai (pan)
2. Take 3-4 tbsp of desi ghee; also called as clarified butter
3. Add few cashews - roasting cashews in ghee gives it a really nice flavour so don't skip it
3. Also prefer using iron kadhai since retains more nutrients compared to those harmful teflon coated utensils and also provides the necessary iron in the body and prevent anemia
3. Add 1 cup of ragi flour
4. And roast the flour nicely on low flame
6. Keep on roasting and don't let any clumps form
7. You'll notice the color gets a weee bit darker, that's an indication that the ragi flour is roasted
7. Add 2-3 spoons of jaggery powder or as needed
8. Add water or milk depending what you have - milk will give it richer and fluffy texture
9. You might notice the halwa sticking to the iron kadhai, don't worry that's because iron kadhai doesn't have any coating
10. Taste and adjust the jaggery powder to your liking
11. Add little cardamon powder
12. Take it out in a bowl and top it up with a little ghee and your favourite chopped dry fruits - prefer almonds and unsalted pistachios
11. Enjoy this nutrient dense halwa warm; and reap the benefits of iron and ancient grain ragi
