Vintage Early 1900’s Graham Cracker Cake # OldCountryCooks
Ingredients for Cake Batter:
8 oz or 1 stick Butter, salted
2 cups Sugar, granulated
5 ea. Whole Eggs
1 small can Evaporated Milk
2 tsp Baking Powder
1 tsp Vanilla Flavoring
1 box Graham Crackers, crumbs
1 cup Coconuts, toasted and shredded
1 cup Walnuts, chopped
Ingredients for Filler:
1 can Pineapples, crushed and drained
16 oz Powdered Sugar
1 Tbsp Vanilla Flavoring
1/2 cup Coconuts, shredded and toasted
½ cup Walnuts, Chopped
Instructions for Cake Batter:
Cream sugar and butter. Add one egg at a time. Add millk, baking powder and vanilla flavoring. Mix well. Then add all the dry ingredients. Mix well. Grease 2 9inch pans for a 2 layer caken or 3 8 inch pans for a 2 layer cake. Bake for 35 minutes in a 300 F pre-heated oven. Let cool on a wire rack. After cooling Divide the filler into 2 or 3 batches. Spread evenly over each cake top and stacking. Enjoy!
Instructions Filler:
Mix all ingredients together well.
